Ingredients
- 2 cans fava beans ≈400 g each, drained
- 120 ml water
- Salt to taste
- ½ to 1 tsp ground cumin
- 1 –2 chillies chopped
- 2 cloves garlic chopped
- Juice of 1 large lemon ≈30 ml
- Olive oil to finish
- 60 g fresh parsley chopped
- 1 tomato diced
Instructions
Heat the beans
- Add the fava beans and water to a pan over medium heat.
- Season with salt and cumin.
Mash
- Lightly mash the beans using a fork or potato masher, leaving some texture.
Make the dressing
- In a mortar and pestle (or bowl), crush the garlic and chillies.
- Stir in the lemon juice.
Combine
- Pour the garlic and chilli mixture over the beans.
- Add a generous drizzle of olive oil.
Finish
- Top with parsley and diced tomato.
- Serve warm with bread and sides.
