Foul Mudammas (Quick Fava Bean Dish)

A quick fava bean dish with garlic, lemon, and herbs, finished with olive oil and fresh toppings.

Ingredients

  • 2 cans fava beans ≈400 g each, drained
  • 120 ml water
  • Salt to taste
  • ½ to 1 tsp ground cumin
  • 1 –2 chillies chopped
  • 2 cloves garlic chopped
  • Juice of 1 large lemon ≈30 ml
  • Olive oil to finish
  • 60 g fresh parsley chopped
  • 1 tomato diced

Instructions

Heat the beans

  • Add the fava beans and water to a pan over medium heat.
  • Season with salt and cumin.

Mash

  • Lightly mash the beans using a fork or potato masher, leaving some texture.

Make the dressing

  • In a mortar and pestle (or bowl), crush the garlic and chillies.
  • Stir in the lemon juice.

Combine

  • Pour the garlic and chilli mixture over the beans.
  • Add a generous drizzle of olive oil.

Finish

  • Top with parsley and diced tomato.
  • Serve warm with bread and sides.
